Jarrah Honey Vegetable Stir-Fry

Adding some colour and impactful flavour to your plate during a weeknight, when you don’t really feel like spending too long cooking is really simple.
With this simple Honey Vegetable Stir-fry recipe, you’ll look like a pro using the sophistication of sultanas and chilli.

Perfectly used as a side dish for dinner, and if you have left overs for the next day, simply toss in some rice, with beans or canned tuna, and you’ll have a terrific lunch to go!

Tips!

  1. Place 1/2 tbsp of Butter in frying pan, turn to med-high heat and add Onion & Capsicum. Cook until soft.

  2. Next add the Sweet Potato & Carrots, add remaining Butter. Add frying pan lid, turn the heat down to low, and cook for 5mins, stirring occasionally.

  3. Next, add Broccoli, Beans, Pine Nuts, Sultanas, Chilli Powder, and Garlic. Remove the frying pan lid, and continue to stir occasionally.

  4. Once Broccoli has softened, add Zucchini, Tomato, and Wellshine Wellson Jarrah Honey, turn up to med-high heat again, and continue cooking until Zucchini has softened.

  5. Finally, stir in Coriander when ready to serve.

1 large Red Onion, diced

1 medium Sweet Potato, diced

6 Baby Carrots, chopped

1 small Broccoli, chopped

250g Green Beans, chopped

1 medium Zucchini, diced

1 large Tomato, chopped

1/4 cup Pine Nuts

1/3 cup Sultanas

2 Tbsp Wellshine Wellson Jarrah Honey

3 Tbsp Coriander, finely chopped

1 tsp Hot Chilli Powder

1 Garlic Clove

Pinch of Salt

1 Tbsp Butter
